Omaggio ad una bella donna, ricca e sensuale, di origine antiche, forse saracene, come tradizione comanda. E proprio a un saraceno \u00e8 attribuita la fortuita invenzione del succulento dolciume, nella primaria versione base fatta di cacio, ricotta, e zucchero di miele. Si tramanda, pi\u00f9 per nostalgia di una leggenda che per storia, di un giovane cuoco arabo alle prese con zuccheri e pentolame, che per un errore di confusione pi\u00f9 che di lingua, al suo assistente siciliano che chiedeva del dolce rispose con il nome di un pentolino di rame:\u201cqas\u2019at\u201d, dando inconsapevolmente i natali al nome cassata, avendo quello scambiato il nome della pentola per il dolce e viceversa. Pi\u00f9 verosimilmente esisteva gi\u00e0 in Magna Grecia un dolce di ricotta che i latini chiamarono <em>caseatus<\/em> e consisteva in un dolce impasto racchiuso in una sfoglia di pasta da infornare, arricchito poi con vaniglia e zucchero di canna. In periodo medioevale il primo abate dell\u2019abbazia di San Martino delle scale, Angelo Sinesio, etichetta la cassata come \u201c<em>cibus ex pasta panis et caseus compositus<\/em>\u201d. La cassata diventa poi dolce pasquale nel 1575 ad opera delle monache pasticcere di un convento di Mazara. Il dolce infatti nella sua rotondit\u00e0 ricordava il cerchio solare, che sorge e tramonta ciclicamente, e per similitudine si pu\u00f2 accostare al ciclo di passione, morte e resurrezione di Cristo ad ogni Pasqua. Ma il trionfo della cassata nota ai notabili e ai turisti di tutto il mondo, nella versione di Pan di Spagna, piena di ricotta dolce e glassa di zucchero, farcita di vaniglia e pasta reale e ricoperta di zuccata e frutta candita come un arabesco floreale, nasce coi Florio intorno al 1878. In quell\u2019anno nientemeno che il confetturiere di Casa Reale, tale Salvatore Gul\u00ec, stravolse la preparazione della famosa cassata: tolta la pasta frolla che andava infornata la sostitu\u00ec con il morbidissimo pan di spagna inzuppato di marsala, aggiungendo poi una zuccheratissima copertura di glassa di chiara d\u2019uovo ricoperta di frutti canditi, sua specialit\u00e0. Per differenziarla dalla cassata al forno il celebre pasticcere chiam\u00f2 la sua invenzione \u201ccassata siciliana\u201d, anche se i palermitani si ostinano a chiamarla cassata di Gul\u00ec in onore al suo creatore.
