Ma <em>u cannolu<\/em> per il resto del mondo \u00e8 un magnifico dolce, ricco e ridondante, scuro come il pane nero ma ripieno di bianco come il latte, a forma di canna ma pieno di crema. Conosciuto gi\u00e0 ai tempi in cui Marco Tullio Cicerone era questore di Sicilia, il \u201cTubus farinarius, dulcissimo, edulio ex lacte factus\u201d ovvero \u201cil tubo farinaceo fatto di latte per un dolcissimo cibo\u201d ha, come molte ricette culinarie di trinacria, origini saracene. Ai tempi degli arabi a Caltanissetta, l&#8217;antica\u00a0<strong>\u201cKalt El Nissa\u201d<\/strong>che significa letteralmente, e non a caso \u201ccastello delle donne\u201d, le concubine di un vecchio Emiro saraceno, fra un trastullo e un altro, trascorrevano il tempo inventando succulenti dolciumi per il loro signore. Durante una delle scorribande culinarie di tutto rispetto condotte dalle poverine, qualcuna tent\u00f2 di imitare un tipico dolce arabo ripieno di ricotta, mandorle e miele, che nella forma assomigliava alla banana. Si sa che le grandi invenzioni nascono da errori e incongruenze sperimentali e il cannolo non fu da meno. Qualcun altro sostiene che a dar i natali al <a title=\"Cannoli Siciliani\" href=\"https:\/\/cannoli.online\/it_IT\/products\/cat\/18\/cannoli-siciliani\">cannolo<\/a> furono invece le consorelle di un ricco convento alle prese con i dolci di carnevale. Le suore, infatti, soddisfatte della creazione della cassata siciliana, altro dolce di origine araba replicato in Sicilia, tentando di imitare un dolce zuccherato, fatto con scorza di farina seccata ripiena di ricotta e zuccata, inventarono invece il cannolo, costituito da una \u201cscorza\u201d di pasta fritta, e ripieno di crema di ricotta, rigorosamente di pecora, arricchita con \u201ccucuzzata\u201d di pezzetti di cioccolato e granelle di mandorle sbriciolate. Insomma il cannolo nacque per scherzo e sotto allegri auspici. Oggi \u00e8 diventato leccornia internazionale, a Piana degli Albanesi hanno istituito persino una sagra. Ma le rivalit\u00e0 campanilistiche non mancano neanche al dolce e mentre a Palermo il cannolo si adorna di due ciliegie e una buccia d\u2019arancia, a Catania si cosparge di graniglia di pistacchi di Bronte.
